@CoffeeandButterCrazy From the Restauranteer's perspective, they serve large quantities of food for two reasons:
1. It justifies charging a higher price. The cost of the extra ingredients is not proportionate to the raised cost of the bill given to the customer, and the gap between is their profit.
2. Repeat business. Being given a lot of food for your money is seen by customers as good value (even if the bill is high) so you are more likely to return to this restaurant again rather than try out their competitor's restaurant.

Don't assume malice when greed is a perfectly rational explanation. American businesses aren't trying to make their customers sick and unhealthy... they just don't care very much if they DO, along the way to making themselves rich.
