@Xarsor Late to the party here, but it's actually quite simple. The strings you can see, on each side of the Danish one, is steel wire, that's been tightly strapped between the base and head, of the "device", and the stick in the middle is rounded, so it slides easily across the cheese.
Knowing this, you just put it down at the edge of the cheese, with one of the wires touching it, and then slide it across the top, cutting off a piece of delicious cheesy goodness. - Having used both types, I'd definitely say, that the Danish one is better, but it also breaks a lot easier, so you have to strap a new piece of wire onto it, every now and then.
