The trick with anchovies is that you have to soak them a few times to get the worst of the salt off. Which no American pizza place does. And it's on the menu in most of America because the cans are cheap and last a very long time.
The classic way to do it is you take the anchovies with the salt soaked off, and cook them on a pizza with only sauce, and just dust with some pecorino romano right out of the oven.
